Ruby red in color with intense aromas of olives and blackberries, Ruby Cabernet grapes are a cross between Cabernet Sauvignon (the most famous red wine grape in the world) and Carignan in order to harvest the advantages of each variety. The superior quality, power and finesse of the Cabernet is mixed with Carignan's high yields and ability to do well in hot climates, especially for regions like the San Joaquin and the Napa Valleys and northwest Texas. The resulting 100% Texas High Plains grapes produce a beautiful dry wine with underlying mineral and tea-like hints of espresso, cherry and sometimes peppery overtones. Aged in American oak for 15 months, this wine delivers a complex array of scents and concentrated aromas and textures.
The tannic structure makes it the perfect wine to pair with fatty cuts of meat, including lamb, veal, and pork. Its earthy quality work well with mushroom dishes.
